Chick Pea Cookies
Ingredients
* 2 cups chick pea flour
* 1 tsp vanilla
* 3/4 tsp cardamom
* 1 egg
* 1 cup icing sugar
* 1/4 cup dried cranberries
* 1 cup butter at room temp
* 1 - 2 tablespoons water
* 1/4 cup raisins
Directions Preheat oven to 350 deg. Cream butter and sugar together for
about 5 min. Add egg, cardamon and vanilla and beat together for about
two min. Stir in chick pea flour and water. Then add the raisins and
cranberries .Drop dough by the spoonfuls -2 inches apart-onto a greased
or lined cookie sheet. bake for 12 to 15 min or until edges are golden
brown. Let cool on pan for 5 min.Yield is approx 60 cookies
