Refereed professional journals publish new research results and are
written for readers who are already experts in the field in question.
Encyclopedias attempt to summarize the current state of knowledge, not
just the latest incremental advances, and are written for a general
audience.  It's not a reasonable comparison.

Take particle physics as an example.  Wikipedia has an article on this
topic.  I haven't read it carefully.  At a quick glance it seems
okay.  Most readers of this newsgroup could probably understand it and
would learn something from reading it.  They would get almost nothing
out of attempting to read an issue of Physical Review D, and even if
they understood every word, they wouldn't have the big picture of what
the field as a whole is about and where it stands today.
